Turkey Burgers With Spicy Sweet Potato Fries
Happy New Year!!! I am so excited that it’s the New Year because I can focus on even more healthy recipes. I have to admit, during the holidays I do tend to eat a bit unhealthily. Now I am back on track and working on all my favorite recipes! Here is a recipe for one of my favorite variations on an all time American favorite: Burgers! I love turkey burgers and sweet potato fries because you still get all the good flavors and textures of a traditional burger, and you save tons of calories and saturated fat! Not to mention you get a lot of anti-oxidants from the fries. This work is licensed under the Creative Commons Attribution 3.0 Unported License. Ingredients
- 1 poundlean ground turkey (preferably free range and organic)
- 1 smallorganic onion, diced
- 1 teaspoonminced organic garlic
- 2 tbspchopped organic parsley
- 1 tbsporganic olive oil
- 4mediums sized organic sweet potatoes, scrubbed (keep skin on)
- 4 tbsporganic peanut oil
- 1 tbsporganic garlic powder
- 2 dashorganic cayenne pepper
- 0salt and pepper to taste
Instructions
- 1
Saute onion and garlic, salt and pepper in olive oil until tender
- 2
Combine the rest of the ingredients and form into 4 round patties (press your thumb to create an indentation into each patty. This will help your burgers from forming into balls)
- 3
Heat grill pan on high, and spray with non-stick cooking spray. Add each burger and cook on high heat on each side for 2 minutes. Turn heat down to medium-low, cover, and cook for another 10-12 min.
- 4
Serve on a whole grain bun with healthy toppings such as tomato, lettuce, avocado, low fat cheese, and a small amount of organic ketchup, low fat mayo, or mustard! Yum!
- 5
Cut up sweet potatoes into even pieces in french fry shapes
- 6
Combine all ingredients together, mix well, and bake on a cookie sheet sprayed with non-stick spray at 400F for 45 min to an hour (in a convection oven if you have one).
- 7
Flip the fries around on the cookie sheet a few times. Cook until the fries reach desired texture. I like to use peanut oil also because it is a healthy oil and has a high smoke point. Serve immediately with the burger.
