This is an old favorite recipe that has been around for ages! The oil and eggs in the original recipe have been replaced with applesauce and egg beaters to create a low fat version. Ingredients

  • 2 cupall purpose flour
  • 2 cupgranulated sugar
  • 1 cupegg beaters
  • 1 cupunsweetened applesauce
  • 1 teaspoonvanilla extract
  • 1 teaspoonbaking soda
  • 1 teaspoonground cinnamon
  • 0.5 teaspoonsalt
  • 3 cupshredded carrots
  • 8 ouncecrushed pineapple, undrained
  • 0.5 cupcoconut flakes

Instructions

    Preheat oven to 350 degrees.

    In the bowl of an electric mixer, mix together the flour, sugar, baking soda, cinnamon and salt.

    Add the egg beaters and applesauce and vanilla. Mix well.

    Add carrots, pineapple and coconut. Mix well

    Pour into 9X13 pan(or 2 9" cake pans) and bake for 45 minutes or until toothpick comes out of center clean.

    Cool completely.
