
Simply Roasted Chestnut Mushrooms
When you have access to amazing mushrooms, like the ones from 518 Farms, you really don’t need to do much to it to get great flavors. I served this with oven-roasted crispy potatoes (baked at the same temperature) with scrambled eggs for Sunday brunch.

- 0.5 lbwhole chestnut mushrooms
- 2 tablespoonminced garlic
- 2 tablespoonolive oil
- 1 tablespoonkosher salt
- 1 tablespoonblack pepper

Finely minced the garlic.

Trim the mushroom stems to an even length.

Toss the mushrooms in a bowl with the oil, salt, garlic, and pepper.

Lay the mushrooms out on a baking sheet lined with parchment and roast at 425 F for 20-25 minutes or until lightly brown.

Rotate the pan 180 after 15 minutes.

Adjust seasoning with salt and pepper. Serve.
