Ingredients

  • 1 tablespoondried goji berries
  • 0.5 tablespoonHEYDOH Silky Soy Sauce
  • scallions, minced
  • 3large eggs
  • 1.25 cupslow sodium chicken broth

Instructions

    In a small bowl, add the goji berries and pour boiling water over them to rehydrate. Set aside.

    In a medium heatproof bowl, whisk together the eggs and broth. Small bubbles might accumulate on the surface. If you want a very smooth, glassy custard, strain the egg mixture through a fine-mesh strainer into another medium heatproof bowl. This will get rid of the bubbles.

    Fill a large wok with 2 inches (5 cm) water and bring to a rolling boil over high heat. Put the bowl in a large bamboo steamer. Cover and lower the steamer into the wok. Turn the heat down to medium so that the water is at a gentle simmer. Steam until the egg custard is completely firm, about 12 minutes.

    Drain the goji berries. Garnish the egg custard with the goji berries and the Silky Soy Sauce. Sprinkle some scallions on top. Enjoy while hot.
