Peanut Butter Cookies - Giangi's Style

Pulling all stops for one more cookie batch in the oven. Peanut Butter Cookies has been a traditional cookie in our house and it would not be Christmas without it. My mother in law always baked this cookie for my husband. When we could not be together for the holidays, she made sure a huge batch would be in the mail for us. Ingredients

  • 1 cupsugar
  • 1 cupbrown sugar, packed firmly
  • 1 cupunsalted butter
  • 2eggs
  • 1 cuppeanut butter, creamy
  • 1 teaspoonbaking soda
  • 1 tablespoonvanilla extract
  • 2.5 cupflour

Instructions

    Preheat oven at 375F. Line baking sheet with parchment paper or a silpat.

    Cream together sugar, brown sugar and butter. Add eggs, peanut butter and vanilla extract. Sift flour and baking soda together and add to the butter egg mixture.

    Once well incorporated, form into ball, one inch apart on a baking sheet and flatten with the back of a fork making a crisscross pattern. Bake 10 minutes. The edges should start to brown and the middle still a b it firm.
