My Favorite Navy Bean Soup

You know that meaty ham bone you have in your freezer? The one left over from your Easter Ham back in April? Yeah, that one .... well, it has been 6 months and is now time to use that ham bone!! Time to make some Navy Bean Soup! Fall is such soup weather! My Mom would make this wonderful Navy Bean Soup with the ham bone! So simple and so Yummy! Ingredients

  • 1 pounddried navy beans
  • 1 poundmeaty ham bone
  • 3 cupchopped celery
  • 3 cupshredded (grated) carrots
  • 1 pcsonion chopped (or shredded with carrot food processor)
  • 1 tbspdried parsley
  • 2 cloveminced garlic
  • 0.25 teaspoontobasco sauce (I use cayenne pepper if I am out of tobas
  • 1 teaspoonsalt
  • 0.25 teaspoonblack pepper

Instructions

    Sort and wash beans

    Add 6 cups water and soak beans overnight or 8 hours (I always forget to do this before I go to bed so I ended up simmering the beans per package instructions, takes about 2 - 2 1/2 hours)

    Drain beans, add ham bone and cover with water

    Cover, bring to boil, reduce heat and simmer 1 hour

  5. 5

    Add remaining ingredients, simmer 1 hour until beans are tender

    Remove bone

    Chop ham and return meat to soup
