K's Special Grilled Chicken With Tomato Salad

K's Special Grilled Chicken With Tomato Salad

Sourced from my blog, http://coloredgrains.wordpress.com. Me and my husband worked it out over a few trials and errors. We both LOVE chicken (its both healthy and yummy!), and we know what a good grill does to chicken. This work is licensed under the Creative Commons Attribution 3.0 Unported License. Ingredients

  • 4 pieceWhole Chicken Legs
  • 1 teaspoonNeutral Flavored Vegetable Oil
  • 0.5 cupPlain Whole Milk Yogurt
  • 1.5 tbspGround Paprika
  • 1 tbspTurmeric Powder
  • 1 tbspCinnamon, ground
  • 1 teaspoonCumin, ground
  • 1 teaspoonCoriander, powder
  • 0.5 teaspoonFreshly Ground Black Pepper
  • 1 tbspGinger Garlic Paste
  • 0.5 teaspoongranulated sugar
  • 3 tablespoonNeutral Flavored Vegetable Oil
  • 1 pcsTomato, chopped
  • 0.5 cupCucumber, chopped
  • 1 pcsRed Onion, Chopped
  • 1 pinchCrushed pepper and salt, to taste

Instructions

  1. 1

Mix oil, yogurt, paprika, turmeric, cinnamon, cumin, coriander, pepper, ginger & garlic, sugar & salt. Your marinade is ready.

  2. 2

In a glass bowl, mix the marinade with the chicken legs. Let this rest in your refrigerator for about 10-12 hours or preferably overnight.

  3. 3

Preheat the oven to 180 degrees centigrade.

  4. 4

Place the whole chicken legs in the oven and grill for about 20 minutes on each side (that is totally about 40 minutes). Once every 10 minutes, brush a bit of vegetable oil over the chicken legs. Make sure the chicken is cooked through, but do not let it burn. Also, turn only when one side is nicely browned and ready.

  5. 5

In the meantime, for the salad, take tomato, red onion & cucumber, chop into cubes, add crushed pepper and salt to taste, and toss. Salad is ready!
