Ingredients

  • 1 cupself-rising flour
  • 1.75 ozbutter, melted
  • 0.25 cupmilk
  • 0.25 tspsalt
  • 1 tspsugar
  • 0.75 tspbaking powder
  • 1egg
  • 2 tbspgrated parmesan
  • 0.5leek, thinly sliced
  • 1.75 ozdiced ham
  • 1.75 ozbrie, chopped
  • 0olive oil
  • 0black pepper to taste
  • 0cayenne pepper to taste

Instructions

    Preheat the oven to 180c. Grease the muffin tin with oil. Fry the leek in a pan with olive oil until brown and softened. Mix together the flour, salt, sugar, parmesan and baking powder in a mixing bowl. In another bowl whisk butter with eggs and milk. Pour in the flour mixture and stir. Add leek, brie, ham and peppers. Fill in the prepared muffin tin and bake for about 25-30 minutes until the tops are golden brown.
