
Turkey Breakfast Sausage
This customization is doubled from the original recipe with some of the spices removed, and the switch to a leaner meat. I like to freeze patties raw on a cookie sheet and then store for a quick cooking when needed.

- 1 poundTurkey, ground 93% lean
- 2 tbspSage, dried
- 2 teaspoonKosher Salt
- 2 teaspoonBrown Sugar
- 0.5 teaspoonground Black Peppercorn
- 1 lbchicken, ground 99% lean

In medium sized bowl, thoroughly combine all ingredients. It's easiest if you use your hands to mix.

Heat a skillet over medium low heat. Form sausage into patties and cook until brown, about 5 minutes per side depending on thickness.
