
Tuna Cakes on Greens

Ingredients
- 2(12-ounce) cans chunk white tuna, well, drained
- 1Scallions, finely chopped
- ⅓ cupsaltine cracker crumbs, if needed, plus more
- 2 largeEggs
- 0.25 cupmayonnaise
- 1 tbspOld Bay Seasoning
- ⅓ cupCanola Oil
- 0.5 cupAll Purpose Flour
- Green salad and lemon wedges, for serving
- fresh flat-leaf parsley, chopped for garnish

Combine tuna, scallion, cracker crumbs, eggs, mayonnaise, and Old Bay in a bowl. (Mixture should be moist but not sopping. Add an extra crumbled cracker or two if it's too wet.) Divide into 8 patties.

Heat oil in a large skillet over medium heat. Place flour in a shallow bowl. Coat both sides of each patty in flour. Fry, in batches, turning once, until golden brown and warmed through, 4 to 6 minutes. Transfer to a wire rack to drain.

Serve atop green salad, garnished with parsley with lemon wedges alongside.
