Instructions

Spatchcock the chicken and pat it dry. Then set it aside.

Prepare the marinate using the pestle and mortar to pound all the ingredients.

Apply the marinate all over the chicken and marinate it for at least 4 hours, preferably overnight.

Preheat the oven for 350F. Bake the chicken for about 40 minutes. Every oven works differently, so adjust the temperature and time accordingly. After that, take the chicken out from the oven and have it rest for about 5 minutes before cutting it.

While the chicken is baking in the oven, you can prepare the spicy dipping sauce. First, toast the raw rice in a dry pan at high heat until golden brown. Make sure you keep stirring it to avoid burning. Then take it out and put it in the mortar. Use the pestle to grind it to a fine powder.

Add the following in a bowl and mix them altogether until well combined: rice powder, fish sauce, lemon juice, sugar, shallot, chili flakes, cilantro. Taste it and adjust the taste at your preference.

Serve the chicken and the spicy nahm jim jaew dipping sauce.
