Stir-fried Spinach with Fermanted Tofu

This is a wonderful and quick vegetable dish to make. The water spinach can be substituted with many other options, such as conventional spinach or broccoli florets. You can find fermented tofu (in a jar) in most Chinese supermarket and it adds an umami rich flavor with a touch sweetness to the dish.

Ingredients

  • 1 bunchChinese water spinach
  • 2 tbspNeutral Flavored Vegetable Oil
  • 5 slicesginger, julienned
  • 4dried chili peppers
  • 1cloves garlic (sliced)
  • 2red fermented tofu
  • teaspoongranulated sugar
  • 0.5 teaspoonFine Sea Salt
  • teaspoonground White pepper
  • 2 tbspShaoxing Rice Wine

    Remove the larger, tough stems from the vegetables. You can leave the thinner, tender stems. Wash the vegetables thoroughly in water (a couple soaks and rinses should work) and transfer to a colander to let the excess water drain.

    Heat oil in large pan over high heat and add the ginger. Stir for about 10 seconds and then add the dried chilies, garlic, fermented tofu, sugar, salt, and white pepper.

    Stir fry the mixture, keeping the heat on high, and add the greens. Stir-fry, moving the vegetables around the bottom of the pan so nothing burns. Use a folding motion, stir fry the mixture so all of the vegetables get seared evenly and cooked through, about 5 to 10 minutes.
