
Slow Cooker White Bean and Pork Stew
Even on chilly fall and winter nights, this white bean cassoulet with pork and lentils will warm you right up.
Ingredients
- 4 ozthick-cut bacon
- 2 cupLow Sodium Chicken Broth
- 0.5 cupDry White Wine
- 3 tbspTomato Paste
- 8 cloveGarlic, peeled
- 1 mediumOnion, chopped
- 114.5-oz can petite tomatoes, diced drained
- 2 lblean pork butt, cut into 2-inch pieces (about 1 1/4 lbs total), trimmed
- 4 sprigFresh Thyme
- 0.5 cupdried brown lentils
- 115-oz can small white beans, rinsed
- Crusty bread, for serving

Place bacon on paper towel-lined plate and microwave on High until crisp, about 4 minutes. Cut into 1-inch pieces.

In 5- to 6-quart slow cooker, whisk together chicken broth, white wine. and tomato paste. Add garlic, onion, and tomatoes and mix to combine. Fold in pork, bacon, and thyme.

Cook, covered, until pork easily pulls apart, 5 to 6 hours on High or 7 to 8 hours on Low.

Thirty-five minutes before serving, discard thyme, then gently stir in lentils. With slow cooker on High, cover and continue cooking until lentils are just tender, 30 to 35 minutes. Gently fold in beans and cook until heated through, about 3 minutes. Serve with crusty bread if desired.
