  • 3 lbboneless beef chuck roast
  • 2 tspcaraway seeds
  • 3 largeYellow Onion, thinly sliced
  • 4Garlic, minced
  • 2 tbspTomato Paste
  • 1 cupLow Sodium Beef Broth
  • 0.5 cupdark beer or extra beef broth
  • 1 tbspWorcestershire Sauce
  • 1 tbspBrown Sugar
  • 1 tbspsweet paprika
  • 2 tspKosher Salt
  • 1 tspGround Black Pepper
  • 2bay leaves
  • 2 tbspavocado or vegetable oil
  • 1 tbspApple Cider Vinegar
  • 2 tbspcornstarch mixed with 3 tbsp cold water
  • Fresh parsley, chopped for garnish

Instructions

    Toast the caraway seeds in a dry skillet over medium heat for about 60 seconds until fragrant, then crush them lightly.

    Pat the roast dry. Mix the caraway, paprika, salt and pepper and rub it all over the meat.

    Heat the oil in a cast iron skillet over medium-high heat. Sear the roast 4 to 5 minutes per side until deeply browned. Move to a plate.

    Lower the heat to medium. Cook the onions in the same pan for 8 minutes, scraping up the browned bits. Stir in the garlic and tomato paste for 1 minute, then deglaze with the beer.

    Spread half the onions in the slow cooker, set the roast on top and cover with the remaining onions. Whisk the broth, Worcestershire, brown sugar and vinegar, pour it around the beef and add the bay leaves.

    Cover and cook on LOW for 8 to 9 hours or HIGH for 5 to 6 hours, until the beef shreds easily with a fork.

    Remove the beef and bay leaves. Set the cooker to HIGH, stir in the cornstarch slurry and cook 15 minutes until thickened.

    Shred or slice the beef, spoon the onion gravy over the top and garnish with parsley.
