This version uses clam juice instead of beer and garlic cloves. For sausage, we used chicken andouille.

Ingredients

  • 0.5 cupOld Bay Seasoning
  • 2 tablespoonFine Sea Salt
  • 8 pcsMedium Red Potatoes
  • 4 quartWater
  • 2 pcslarge Vidalia onions, cut into wedges
  • 2 poundchicken andouille sausage
  • 4 pcsfresh corn on the cob, halved
  • 4 poundShrimps, large
  • 8 fluid ouncesclam juice
  • 4 clovesGarlic

Instructions

    In an 8-quart stock pot, bring Old Bay, salt, water and clam juice to a boil.

    Add potatoes and onions. Cook over high heat for 8 minutes.

    Cut sausage into 2 inch piece. Add sausage to the pot. Cook on high for 5 minutes.

    Add corn and cook for another 7 minutes.

    Add shrimps and cook for 4 more minutes.

    Use a ladle to move everything into a large serving platter or bowl. Serve wi the extra Old Bay, hot sauce or butter.
