
Savory Whipped Cottage Cheese and Tomatoes Bowl Recipe

Ingredients
- 16 ozcottage cheese, 1% or 2%
- 0.25 cupcrumbled feta cheese, fat-free
- 2 cupbaby tomatoes (quartered)
- 0.25 cupfresh parsley (chopped)
- 0.25 cupfresh basil (chopped)
- 3Tablespoons olive oil
- 0.25 tspblack pepper, optional
- Optional: pita chips and crostini, carrots, jicama, bell pepper or other crisp veggie. for serving

In the bowl of a food processor, or good blender combine the cottage cheese & feta cheese.

Pulse until smooth, and set aside.

In a separate bowl, add the baby tomatoes, parsley, basil, olive oil, salt, and pepper. Gently mix to combine, and set the bowl aside for 15 minutes.

Spoon the blended cottage cheese into a low bowl or on a plate. Top with the marinated tomatoes.

Serve with pita chips or crostini, if desired. Another option is to serve this dip as a sauce over veggies, like roasted asparagus, or a fish, like branzino or cod.
