Ingredients

  • 1 cupLow Fat Cottage Cheese
  • 0.5 cupNonfat Plain Greek Yogurt
  • 1scoop (30g) vanilla whey or casein protein powder
  • 1 tbspPure Maple Syrup
  • 0.5 tspVanilla Extract
  • 0.25 tspLemon Zest
  • pinchcinnamon
  • 1 largeApple, diced
  • 1 tspButter
  • 1 tspGround Cinnamon
  • 1 tbspbrown sugar or brown monk fruit sweetener
  • 1 tbspWater
  • 2 tbspsugar-free caramel sauce
  • 2graham cracker sheets, crushed
  • 1 tbspPecans, chopped
  • pinchflaky sea salt

Instructions

    Add cottage cheese, Greek yogurt, protein powder, maple syrup, vanilla, lemon zest and cinnamon to a high-speed blender. Blend 60 to 90 seconds until completely smooth.

    Divide between two bowls and refrigerate for 15 minutes so the base thickens.

    Melt butter in a nonstick skillet over medium heat. Add diced apple, cinnamon, brown sugar and water. Cook 6 to 8 minutes, stirring often, until soft and syrupy.

    Let the apples rest 2 to 3 minutes off the heat.

    Top each bowl with apples, caramel sauce, graham crumbs, pecans and a pinch of flaky salt. Serve right away.
