- 1.5 cupAll Purpose Flour
- 2 tspBaking Powder
- 1 tspcinnamon
- 0.5 tspSalt
- 1 largeEggs
- 1.5 cupmilk of choice
- 3 tbsphoney or monk fruit sweetener
- 2 tbspbutter or oil, melted
- 1.5 tspVanilla Extract
- 0.5 cupCheddar Cheese, shredded optional
- 6fully chicken or turkey breakfast sausage links, into bite-sized pieces (3½ ounces total), cooked chopped
- Maple Syrup, for serving

Preheat the oven to 350°F (180°C). Coat a 12-cup muffin tin with nonstick spray.

In a medium bowl, mix together the flour, baking powder, cinnamon, and salt until well combined. Form a well in the center.

Add the egg to the well and whisk the egg to break it up. Add the milk, honey, melted butter, and vanilla. Mix until the batter is just combined. Fold in the cheese until incorporated.

Pour the batter into the prepared muffin tin. Divide the sausage evenly into each cup, gently pressing the sausage into the batter until covered.
