- 1 largeEggs
- ⅔ cupButtermilk
- 2 cupPanko Breadcrumbs
- 6 tbspCanola Oil, divided
- Kosher Salt
- Ground Black Pepper
- 1 mediumsweet onion ( 1/4 in. thick, rings separated), sliced

Place flour in a dish. Whisk together egg and buttermilk in a second dish. Toss together panko breadcrumbs and 3 tablespoons canola oil in a third dish. Season with salt and pepper.

Dip sweet onion in flour, then in egg mixture, then in breadcrumb mixture.

Brush 2 large baking sheets with 3 tablespoons canola oil. Heat in 450 degrees F oven for 5 minutes. Arrange onion rings on hot pans. Bake, turning once, until golden brown, 16 to 18 minutes.
