
Mediterranean Cheesy Garlic Breadsticks with Yogurt Herb Dip
Soft homemade breadsticks topped with garlic butter, mozzarella, feta and oregano, served with a cool Greek yogurt herb dip with cucumber, dill and mint.
Ingredients
- 3 cup(375 g) all-purpose flour
- 1packet (2 1/4 tsp) instant yeast
- 1 tspSugar
- 1 tspSalt
- 1 cup(240 ml) warm water
- 3 tbspExtra Virgin Olive Oil
- 3 tbspButter, melted
- 2 tbspOlive Oil
- 4Garlic, finely minced
- 1.5 cupMozzarella Cheese, shredded
- 0.5 cupFeta Cheese, crumbled
- 0.25 cupParmesan Cheese, grated
- 1 tspDried Oregano
- 0.5 tspRed Pepper Flakes, optional
- 2 tbspfresh parsley, chopped
- 1 cupPlain Greek Yogurt
- 1 smallcucumber, dry, grated squeezed
- 1garlic clove, grated
- 1 tbspLemon Juice, fresh
- 1 tbspfresh dill, chopped
- 1 tbspfresh mint, chopped
- 1 tbspolive oil (for the dip)
- Salt and Pepper, to taste

Mix the warm water, sugar and yeast in a large bowl. Let it sit for 5 minutes until foamy.

Add the flour, salt and olive oil. Stir, then knead on a floured surface for 6 to 8 minutes until smooth and stretchy.

Put the dough in an oiled bowl, cover it and let it rise in a warm spot for 45 minutes, until doubled.

Squeeze the grated cucumber dry. Mix it with the yogurt, garlic, lemon juice, dill, mint, olive oil, salt and pepper. Cover and chill.

Preheat the oven to 425°F (220°C). Press the dough into a 9x13 inch rectangle on a parchment-lined baking sheet.

Mix the melted butter, olive oil and minced garlic. Brush it over the dough, right to the edges.

Sprinkle on the mozzarella, feta, Parmesan, oregano and red pepper flakes.

Bake for 15 to 18 minutes, until the cheese is bubbly and the edges are golden brown.

Rest for 3 minutes, sprinkle with parsley, cut into strips and serve warm with the yogurt dip.
