
Low Sodium Honey Lime Chicken Rice Bowl
Low sodium, low fat and healthy honey lime chicken rice bowl that's a little sweet, a little salty, a little zesty. You can make it a little spicy too by substituting hot honey fir the honey.
Ingredients
- 1 lbBoneless chicken thighs or chicken breast cut into bite-size pieces
- 2 tbspHoney (can substitute hot honey for more heat)
- 2 tbspLime Juice, fresh
- 1 tbspOlive Oil
- 2 clovesGarlic, minced
- 1 tspGround Paprika
- 0.5 tspChili Powder
- 0.5 tspNo Salt (or real salt but this is low sodium)
- 0.5 tspGround Black Pepper
- 3 cupsCooked white or jasmine rice
- 1 wholeAvocado, peeled seeded diced
- 1 cupCorn
- 1 cupTomatoes, diced
- 0.25 wholeRed Onion, finely chopped
- Fresh Cilantro
- Lime Wedges

In a bowl, whisk together honey, lime juice, olive oil, garlic, paprika, chili powder, No Salt, and black pepper. Add the chicken and toss until well coated. Let it marinate for 15–30 minutes if you have time. Heat a large skillet over medium-high heat. Add the chicken and cook for 6–8 minutes, stirring occasionally, until golden brown and fully cooked. Add any remaining marinade to the pan during the final few minutes and let it cook until glossy and slightly thickened. Divide the cooked rice between serving bowls. Arrange the honey-lime chicken, avocado, corn, tomatoes, and red onion over the rice. Sprinkle with fresh cilantro and squeeze fresh lime juice over everything. Serve warm and enjoy!
