Kimchi Pancake

The inspiration came from Maangchi’s kimchi pancake recipe. This is a great way to use any leftover kimchi and a great recipe for a quick snack.

Ingredients

  • 2 tablespoonKimchi Brine
  • 0.5 poundNapa Cabbage Kimchi, chopped into small pieces
  • 3 pcsScallions, chopped
  • 0.5 teaspoongranulated sugar
  • 0.5 cupall purpose flour
  • 0.5 cupWater
  • 4 tbspNeutral Flavored Vegetable Oil

Instructions

    Combine kimchi, kimchi brine, scallions, sugar, flour and water in a medium bowl and mix well.

    Hear a large nonstick pan over medium heat. Add 2 tablespoons of the oil and coat the bottom of th pan.

    Pour batter into the pan to form a large circle. Cook until the bottom is golden brown. About 5 minute per side.

    Carefully turn your pancake to cook the other side and drizzle more oil around the edges. Cook for about 5 minutes to make sure this side is crispy as well.

    Slide onto a large plate and serve.
