
Japanese Cold Ramen Hiyashi Chuka
Hiyashi Chuka is Japanese cold ramen noodle salad with colorful toppings and homemade dressing. This is so delicious and perfect for hot summer days.
Ingredients
- 1 cupEdamame
- 1 cupHam, shredded
- 2 eggEggs
- 2 cupsLettuce
- 2 cupsMushrooms
- 1Red Bell Peppers
- 1 cupCherry Tomatoes
- 1 tbspCooking Oil
- 1 packRamen Noodles
- 0.5 tspGround Ginger
- 4 tbspSoy Sauce
- 3 tbspWhite Rice Vinegar
- 4 tbspWater
- 2 tbspWhite Sugar
- 1 tbspToasted Sesame Oil
- 0.5 tbspChicken Powder

Thaw and shell the frozen edamame.

Shred the ham. If using deli ham, thinly slice 4 pieces and set aside.

Beat 2 large eggs.

In a pan, add 1 tbsp oil, pour the beaten egg into the pan to make egg omelette.

When the egg is cooked, flip and cook so both sides are set. Then roll the omelette.

When the omelette is cool, cut it into thin strips to make egg ribbons.

Pan fry the mushrooms.

In a pot of boiling water, cook the ramen noodle. Drain the water and set the noodle aside.

Wash and chop the lettuce, then spin or pat dry. Also, cut the red bellpeppers into pieces and cherry tomatoes in half.

Assemble the salad ingredients in a plate. Start with the chopped lettuce, then arrange all the other toppings on the lettuce.

Prepare the salad dressing by mixing all the ingredients.

Pour the salad dressing and mix all the toppings and noodle together.
