Ingredients

  • 1 cup (225g)Low Fat Cottage Cheese
  • 0.75 cup (170g)Nonfat Plain Greek Yogurt
  • 2 oz (56g)light cream cheese (Neufchâtel), softened
  • 1 scoop (30g)vanilla whey protein powder
  • 2 tbspLemon Juice, fresh
  • 1 tbspLemon Zest, finely grated (about 1 large lemon)
  • 1.5 tbsphoney or pure maple syrup
  • 0.5 tspPure Vanilla Extract
  • PinchFine Sea Salt
  • 2 tbspgraham cracker crumbs
  • 0.5 cupFresh Blueberries
  • 1 tbspLemon Curd, (optional, but lovely)

Instructions

    Step 1: Soften the cream cheese. Leave it on the counter for 15 minutes, or microwave it for 10 seconds. Cold cream cheese leaves little white specks in the base.

    Step 2: Blend until silky. Add cottage cheese, Greek yogurt, cream cheese, lemon juice, honey, vanilla, and salt to a high-speed blender or food processor. Blend for 60 to 90 seconds, scraping down the sides once. It should look glossy and completely smooth.

    Step 3: Add the protein powder last. Add the scoop and pulse just until combined, about 10 seconds. Overblending protein powder makes the mixture foamy and a little gluey.

    Step 4: Fold in the zest. Stir the lemon zest in by hand. Blending the zest can turn it slightly bitter.

    Step 5: Chill. Divide between two bowls or glass meal prep containers and refrigerate for at least 30 minutes. It thickens as it chills.
