
Guacamole
The perfect guacamole to eat by itself or an addition to your tacos. The jalapeños can vary in spice level, so consider adjusting as needed. Removing the seeds can help remove the spice, but keep the flavor of the peppers. I love cilantro, so adjust according to your taste or completely leave out if you can’t palate the taste.
Ingredients

- 1 cupRed Onion, finely diced
- 0.75 cupfresh tomatoes, chopped
- 2 piecesJalapeño
- 0.5 cupFresh Cilantro
- 2 tablespoonLime Juice
- 2 pinchSalt

Begin by roasting or grilling the jalapeños. I placed mine under the broiler for about 5 minutes total. You want the skin to be nice and charred.

Chop the onion, tomato, and jalapeño, then add to a large bowl.

Scoop the avocado into the bowl and mash all of the ingredients together. Use a potato masher if you like your guacamole smoother or a fork if you want to some chunks to remain.

Add the lime juice, cilantro, and salt and stir well. Taste the guacamole and adjust seasoning as needed. If your jalapeños weren’t spicy, try adding a little cayenne pepper if you want to give it a little heat.
