
Garlic Butter Steak Bites & Tomato Penne
Juicy sirloin steak bites seared in garlic butter, tossed with a rich tomato penne made in the same skillet. A high protein steak pasta dinner ready in 35 minutes.
Ingredients
- 1 lb(450 g) sirloin steak, cut into 1 inch cubes
- 1 tbspExtra Virgin Olive Oil
- 3 tbspUnsalted Butter
- 5Garlic, minced
- 1 tspKosher Salt
- 0.5 tspGround Black Pepper
- 0.5 tspSmoked Paprika
- 1 tbspfresh parsley, chopped
- 12 oz(340 g) penne pasta
- 1 tbspButter
- 3Garlic, minced
- 1 cupCherry Tomatoes, halved
- 1 can(14 oz) crushed tomatoes
- 0.5 tspDried Oregano
- 0.25 tspRed Pepper Flakes
- 0.5 cupreserved pasta water
- 0.5 cupParmesan Cheese, freshly grated
- A handful of fresh basil leaves

Pat the steak cubes completely dry with paper towels. Season with salt, pepper and smoked paprika, then rest at room temperature for 15 minutes.

Cook the penne in well salted boiling water 1 minute less than the package directions. Reserve 1 cup of pasta water, then drain.

Heat the cast iron skillet over medium high heat for 3 minutes. Add the olive oil and the steak in a single layer. Sear 2 minutes without moving, flip and sear 1 to 2 minutes more. Work in batches if needed.

Lower the heat to medium. Add 3 tablespoons butter and the garlic, and spoon the foaming butter over the steak for 45 seconds. Transfer to a plate and sprinkle with parsley.

In the same skillet, melt 1 tablespoon butter and cook the remaining garlic for 30 seconds. Add the cherry tomatoes and cook 3 minutes until they burst. Stir in the crushed tomatoes, oregano and red pepper flakes and simmer 6 to 8 minutes.

Add the penne and a splash of pasta water and toss until glossy. Stir in the Parmesan, then fold in the steak bites and their resting juices.

Top with fresh basil and extra Parmesan and serve right away.
