
Dark Chocolate Strawberry Chia Seed Pudding
This fiber-rich strawberry chia seed pudding is the kind of treat that feels indulgent, but still loves you back. Creamy and topped with a thin layer of dark chocolate, or for convenience sake, simply toss in a few chocolate chips. Sprinkly with freeze-dried strawberry if you like that extra crunch! The blended strawberries give it natural seeetness, so skip the maple (added sugar) until you know you need it. Enjoy!
Ingredients
- 1 lbfresh strawberries, hulled and sliced
- 1 cupmilk (any variety)
- 1 cupplain Greek yogurt ( or vanilla skyr if Greek is too tart)
- 1 tsppure vanilla extract ( omit if using vanilla yogurt)
- 0.25 cuppure maple syrup ( add as needed, skip if not needed!
- 0.5 cupchia seeds
- 0.5 cupdark chocolate chips
- 1 tspcoconut oil (optional)
- Crushed freeze-dried strawberries- optional , for garnish
- 2 tspDark Cocoa Powder-optional

Process strawberries, milk, yogurt, vanilla and maple syrup in a blender until smooth. You can also add chia here and blend to make smoother. Transfer to a bowl.

If not blended, add chia seeds and stir to combine. (Milled chia seeds are already refined and can make a smoother pudding.) Ladle or pour into serving dishes and refrigerate for at least 1 hour.

Melt chocolate chips and coconut oil together. Drizzle evenly onto the top of each pudding. Sprinkle with freeze-dried strawberries.
