Ingredients

  • 4Chicken, pounded to even thickness
  • Salt and Pepper, to taste
  • 0.5 cupAll Purpose Flour
  • 3 tbspOlive Oil
  • 3 tbspUnsalted Butter
  • 4 clovesGarlic, minced
  • 1 cupChicken Broth
  • 1 cupHeavy Cream
  • 0.75 cupParmesan Cheese, freshly grated
  • 1 tspItalian Seasoning
  • 0.25 tspRed Pepper Flakes, (optional)
  • Fresh parsley, chopped, for garnish

    Pat the chicken breasts dry, season both sides with salt and pepper, then coat lightly in flour, shaking off the excess.

    Heat the olive oil in a large skillet, a cast iron skillet works especially well here for even heat retention, over medium-high heat. Sear the chicken for 5 to 6 minutes per side until golden brown and cooked through. Transfer to a plate and tent loosely with foil.

    Reduce the heat to medium and melt the butter in the same skillet. Add the garlic and cook for about 30 seconds, just until fragrant. Don’t let it brown, or the sauce will taste bitter.

    Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let it simmer for a minute or two, then stir in the heavy cream.

    Lower the heat and gradually whisk in the Parmesan cheese until the sauce is smooth and slightly thickened. Add the Italian seasoning and red pepper flakes if using.

    Return the chicken and any accumulated juices to the skillet. Spoon sauce over the top and simmer for 2 to 3 minutes to let the flavors come together. Garnish with fresh parsley and serve immediately.
